1/4 cucumber, shaved into long strips with a peeler
2 sticks celery, shaved into long strips with a peeler
1 lemon juiced
3 tbsp apple cider vinegar
1 red chilli deseeded and finely chopped
4 tbsp olive oil
200g smoked salmon
50g cevre (or any creamy goats cheese)
1. Mix the cucumber, celery, lemon juice, vinegar, chilli, and olive oil together in a bowl
2. Lay the salmon flat out on the plate
3. Top the salmon evenly with the celery and cucumber pickle.  Break the goats cheese into pieces, sprinkle over the salad and serve.
